This is a traditional French wedding cake consisting of choux buns filled with orange liqueur crème-patissier, stacked in a tower and finished off with caramelised sugar.
The croquant stand base is made with almonds and toffee and can be decorated with royal icing and fresh flowers.
A number of variations are possible, including Croquembouche drizzled with caramelised sugar, covered with spun sugar, decorated with marzipan flowers or smothered in a rich chocolate coating.
